Detroit

Republic Tavern

Summary

Another trip to Downtown Detroit to try another new addition to the growing culinary scene that even Zagat recently recognized. Located in the Historic Republic Armory building, Chef Kate Williams does a great job with various meat centric dishes. The French Fries were amazing, cooked in Beef Tallow with duck fat aioli, in the LD’s top 5 best fries devoured in the last several months. The slaw had a great savory flavor. The lamb loin done with smoked leek confit, charred cipollini onions, corned lamb fat, and(yes)! chocolate jus was amazing. The Steak was also off the chain, it was dry aged, cooked with miso butter, served with greens, rutabaga mash(awesome), and beets. The desert were well worth hitting the long trail to get there. The Brown Bread Ice Cream was incredible with a cooked marshmallow topping that had salted carmel, & a cookie crumb base served in a jar. Then the Chocolat Pot Du Creme served with Beet Ice Cream was fantastic. Who’d a thunk that those flavors would go together, but they did & it was amazing!!!! The LD and his posse really enjoyed. This was a definite 4 Silver Bullets & look forward to a quick return.Detroit is causing a scene…yes a dining scene. Yippee!!!
