Summary
Young Guns Dinner- 4 Chefs that participated in Top Chef- Mei Lin, Melissa King, James Rigato, and Adam Harvey. First was an Aperitif which was Knickerbocker Gin, Campari, Cocchi Rosa,Strawberry,Lime Acid which was good. The Amuse Bouche was Cotechino & Lentils done by Luciano Delsignore, the host chef.The Crudo of Red Snapper,Serrano,Coconut Vinaigrette,Finger Lime & Ginger was very good(Mei’s dish). Cabbage Veloute-Guanciale,Caraway-Spaetzle,Pickled apple(Melissa King) was tasty. Wild Stripped Bass-“En Croute” Bouillabaisse Puree,Pickled Mussels & charred leek(Adam Harvey) was very good.then to clean the palete Intermezzo-Cappelletti Infused Wild Berry Sorbetto.
Next was Cold Hear Warm Tongue-Local Beef&Pork,Sunseed Farms Onion Mousse,Pickled Ginger,Kentucky Barrel Soy, Kimchi Jus(James Rigato) just ok. Next up,Poultry which was Slagel Farm Chicken Ballotine,Celery Root, Smoked Apple Butter, Black Truffle, & Brioche which was very good(Edward Sura). Desert was Meyer Lemon- Brazil Nut & Parsnip…ok. A great event,which included all the chefs oming out and mingling amongst the diners. Well worth the price & a fun culinary evening.It also worth galloping via Uber.
